Hi Reader,

I've been walking my kids to school in the mornings, and the wooded trail we use to get there is so beautiful right now! Fluttering leaves on the cusp of fully changing colors, singing crickets, and crisp morning air — it's a wonderful way to start the day together.

Inspired by these lovely, early-fall mornings, I've included a couple of recipes in this week's meal plan that always see a huge uptick in traffic this time of year.

Coupled with a few family-favorites, this upcoming week is looking truly delicious. Without further ado, here is your inspiration for next week's meal plan!

Let's Break it Down

#1 Chicken Meatballs

I. Love. These. Meatballs! They're super tender, versatile, make-ahead and freezer-friendly. Serve with spaghetti and marinara sauce, turn into cheesy meatball subs, or serve with mashed potatoes and gravy.


#2 Cheeseburger Quesadillas

My family cheers when these crispy quesadillas are on the menu (me too). Brown the ground beef and make the Special Sauce several days ahead of time to get this meal on the table in just 15 minutes. Serve with side salads or sliced apples or pears.


#3 Crock Pot Chicken & Wild Rice Soup

This is a DREAM dinner during a busy week. Add all the ingredients into the slow cooker then press "on". Easy as that. Serve with Gluten Free Focaccia or Gluten Free Biscuits.


#4 Caramelized Ground Pork Bowls

This dish takes a little work, but you'll understand why it's worth it after the first bite. SO GOOD. Save for Friday or the weekend when you have a bit of extra time to spend in the kitchen. Other readers love this recipe. Report back if you try, will you?


#5 Caramelized Sweet Potato & Kale Fried Wild Rice

This dish is all-fall, and hearty enough to serve as a light dinner on its own (double it if you're feeding 4 or more). That said, feel free to pair with Roast Chicken, Air Fryer Chicken, or Baked Chicken Breasts for a bulkier meal.
