🍁 15 Healthy Fall Dinners

Hi Reader,

The other day I found myself daydreaming of ways I could hack Chicken Noodle Soup so I could make it by the bowl on demand. πŸ€”

I decided to finely chop onions, celery, carrots, and garlic in the food processor then freeze the mixture in a Ziplock bag. Next I'd shred a rotisserie chicken and put that in the freezer as well. When a craving hits, all I'd have to do is simmer a scoop of the frozen veggies in chicken broth until tender, add a handful of dry pasta (obsessed with this for soups), then finish with a scoop of frozen shredded chicken, which would cool down the bowl of soup.

Clearly my brain is in comfort food mode (and truly, this is how much I love soup πŸ˜†) which is why I'm sharing 15 healthy yet cozy fall dinner recipes with you today! Fill your plate and bowl with these easy and nutritious recipes highlighting comforting fall flavors.

Fluttering leaves on the cusp of fully changing colors, singing crickets, and crisp morning air β€” it's a wonderful way to start the day together. Inspired by these lovely, early-fall mornings, I've included a couple of recipes in this week's meal plan that always see a huge uptick in traffic this time of year....

Hi Reader, Last week I had a mini epiphany after complaining to myself about two random things for weeks on end: My (very old) workout socks all had holes in them. The supply of rubber bands I keep on hand for closing bags of this and that when these are all in use had run dry. The epiphany was that I had to do something in order to fix these issues. My socks weren't going to magically become whole again, nor were rubber bands going to...

Hi Reader, Last week I published the recipe for Gluten Free Breakfast Bombs, and folks started making them the very next day (I LOVE when this happens)! What's a breakfast bomb, you might be asking yourself? Fair. πŸ˜† It's a twist on Brazilian cheese bread that combines eggs, cheese, and breakfast sausage or bacon in a hand-held meal that's got a light yet satisfying crunch on the exterior, and a soft and chewy-gooey interior. In a word: irresistible. 🀀 Bake a batch then reheat all week for a...
