#1 Crispy Chicken, Bacon, Pesto Gnocchi Skillet

This has been my family's hyper-fixation meal for years β€” it never gets old. Use my incredible homemade pesto or your favorite store-bought pesto. We love Gotham Greens which I find at Whole Foods. I've heard Costco's Kirkland brand pesto is wonderful, though I haven't tried it myself. Serve this meal with a big side salad or Air Fryer Green Beans.


#2 Italian Sausage Pepper Ring Mini Meatloaves

I'm a sausage and peppers fanatic (it's a dish I grew up eating) and love that these mini meatloaves taste slow-cooked yet are quick, and prep-ahead too. Serve with cooked pasta and extra marinara sauce, Healthy Mashed Potatoes, Garlic-Butter Mushrooms, Cucumber-Tomato Salad, or Roasted Spaghetti Squash.


#3 Creamy Chicken Wild Rice Soup

Although it's been over a decade since I've been able to eat at Panera, I ordered their Creamy Chicken & Wild Rice Soup with such intensity as a teenager that the taste and texture is forever etched in my mind. That said, believe me when I tell you this is a perfect dupe! SO thick, creamy, and flavorful. Serve with fresh apples, pears, or grapes, and Gluten Free Focaccia.


#4 Perfect Gluten Free Pancakes

My kids are thrilled when pancakes are on the dinner menu β€” me too, because they're so darn simple to make and everyone cleans their plate. Serve with my hands-off Oven-Baked Bacon and fresh fruit then call it a night.


#5 Greek Chicken Bowls

Finish out the week with something fresh! My Greek Chicken Bowls are light yet satisfying, and packed with flavor. Prep the components ahead of time then assemble in minutes. This is a great staggered-eating type of meal if family members need to eat at different times due to extracurriculars/activities.
