Hi Reader,

I don't know about you, but I'm already feeling the Christmas crunch (and not the good kind 😆)! All of the sudden I'm aware of how much there is to do over the next few weeks between hosting, school activities, shopping for Christmas gifts...the list goes on and on, and I know it does for you too!

That said, join me in pencilling these simple yet family-pleasing recipes into next week's menu so you can at least get meal planning checked off your list!

🍽 Weekly Meal Plan

1️⃣ Easiest Baked Chicken Breast

2️⃣ Skillet Tater Tot Casserole

3️⃣ Chicken Noodle Soup

4️⃣ Italian Rice Ball Skillet

5️⃣ BBQ Avocado Bacon Cheddar Chicken

📆 Let's Break it Down

#1 Baked Chicken Breast

The only thing that tops how juicy and tender these baked chicken breasts are is how simple they are to prepare. Plus they bake completely hands off. Serve with store-bought mashed potatoes (I like Bob Evans) and a roasted veggie since the oven will already be on - I've got tons of ideas in the post.

#2 Skillet Tater Tot Casserole

My husband made this for dinner last weekend and we literally scraped the skillet clean. There are never, ever any leftovers! This recipe is full of veggies so no extra sides are needed.

#3 Chicken Noodle Soup

This recipe is dead simple yet is truly the best homemade Chicken Noodle Soup you'll ever have. Read the comments on the post and you'll see that folks seem to agree with me on this! Serve with Gluten Free Focaccia or crackers, and side salads.

#4 Italian Rice Ball Skillet

This one-pan recipe requires zero chopping - ZIP! It comes together quickly and is super comforting and tasty. Serve with sliced apples or pears, or grapes. There's peas inside the dish so veggies are covered, imo!

#5 BBQ Bacon Cheddar Chicken

It pains me that this recipe isn't more popular, because it is so unbelievably tasty and quick-cooking. It's one of my favorite chicken cutlet recipes on IGE. Serve with Pasta Salad, Mashed Potatoes, or Air Fryer Green Beans.

To opt out of free weekly meal plans, click here. Hi Reader, A couple weeks ago I took my daughter roller skating for the first time at a local rink. Never have I felt older then when I wondered if we'd skate in the opposite direction at some point to get equal wear and tear on our inside knee. 🤣 Although we skipped out on the limbo (yes, they're still playing that - and the dice game!) muscle memory eventually took over, we had the most fun time. Necks, backs, and knees fully intact at the...

brown bag baked ham

To opt out of seasonal/holiday emails, click here. Hi Reader, I'll never forget my husband's reaction the first time he saw my Mom prepare our family's traditional Christmas ham. He about fell out of his chair. 😆 True, the method is unorthodox, but it makes for the most delicious and juicy ham you will ever have in your life. No basting nor brushing required. It truly doesn't get easier or more delicious than Brown Bag Baked Ham. I honestly cannot wait to have a slice (or 7) on Christmas Day!...

bowl of chicken stew

Hi Reader, It's been cold and snowy here, which I'm (gasp) slightly enjoying as we lead up to Christmas. It's the kind of weather where only the heartiest and coziest of dinners will do. That said, my Chicken Stew has been hitting the spot lately! Savory, slightly-thickened, and packed with flavor, it features pulled chicken, veggies, and a flavorful, herby broth. Warming from the inside out, and easy - though I think it's special and gorgeous enough to serve for Christmas Eve dinner....
