Yesterday I updated my ultimate gluten-free Thanksgiving menu and pushed publish with wide eyes β€” it's bonkers to me that we're heading into November and the end of daylight savings time this weekend!

With that in mind, I included hearty and easy dinner recipes in next week's meal plan. Because, I don't know about you, but when it's cold and dark at 5pm, it takes everything inside of me to not get into my PJs and crawl into bed at the same time. Alas, my family insists on eating dinner each night? πŸ˜†

#1 Hamburger Soup

This soup tastes like the canned vegetable soup of my childhood except way, way better. From the hearty beef and veggies, to the nourishing broth, each bite is packed with flavor and nutrition. That said, I LOVE watching my kids devour their bowls. Serve with Gluten Free Focaccia or Biscuits.


#2 Black Bean Butternut Squash Quesadillas

These meatless quesadillas look unassuming but are incredibly delicious. If you don't think your family will go for butternut squash, swap in diced sweet potatoes instead. I'd love for you to give it a try as written though and see how it goes. Each crispy, cheesy bite is packed with fall flavor.


#3 Cheesy Chicken Enchiladas

I've made these enchiladas so many times that I could whip them up in my sleep. That's how much we love them! Use any kind of chicken - rotisserie, roasted, air fried, baked, or otherwise - and make the homemade enchilada sauce up to 5 days ahead of time. Pair with Easy Creamy Pinto Beans, Restaurant Style Salsa, and/or Cilantro-Lime Rice.


#4 Loaded Italian Sausages

These taste like Italian Sausage and Pepper Sandwiches - minus the bun - but are a lot quicker and easier to make. SO decadent and delicious! Keep the dish low-carb by pairing with Roasted Spaghetti Squash and marinara sauce, or cooked spaghetti and sauce, or simply a fresh side salad.


#5 Creamy Wild Rice Mushroom Soup

This hearty soup tastes like it comes from a local cafe. Elegant, yet easy and satisfying. The recipe is meatless though feel free to add leftover diced or shredded chicken if you have any on hand from the enchiladas. Pair with a side salad or crispy crostini.
