It's hard to believe Halloween is next week! The build up has been a blast β€” picking out pumpkins and costumes, watching our favorite Halloween movies, and decorating the house with spooky touches (my kids convinced me to put up fake cobwebs this year - I actually don't hate it πŸ˜†). What I do hate is to see it all come to an end!

Alas, time stops for no one which means it's also time to plan out next week's dinners. While you can and should adjust this menu to best fit your schedule, I did incorporate our traditional, pre-trick-or-treat dinner into the fifth recipe spot. Regardless of if you have TOT's, it's a hearty fall staple that I highly recommend for this time of year.

#1 Beef & Veggie Enchilada Skillet

I made a version of this dinner last weekend when I randomly found myself with all the ingredients on hand. I whipped up the homemade enchilada sauce and dinner was done in 20 minutes. All that said, this dish is customizable to use whatever you have, and the enchilada sauce can be made days in advance to get this "lazy girl's enchiladas" meal on the table in no time. My family loves it!


#2 One Pot Chicken and Rice

This simple, one pot meal has nearly 300 reviews with people saying the same things: Easy. Cozy. Delicious. Creamy. Flavorful. It really does please all palates, and is a complete meal in one. That said, I like to use the trick of having my kids eat a side salad while they wait for their bowls of food to cool off to get a few extra veggies in.


#3 Creamy Mushroom Parmesan Pasta

Sounds and looks super fancy yet is ready in 30 minutes. This is a riff on a dish I had at an all gluten free restaurant in NYC a few years ago and it satisfies just the same - no plane ticket necessary.


#4 Thai Quinoa Salad with Peanut Dressing

Speaking of food I'm day dreaming about...this texture and flavor-packed salad is on my mind constantly. SO GOOD, filling, and that Peanut Dressing is a must-try. Pair with sauted or roasted shrimp, or pulled rotisserie chicken.


#5 Signature Chili

This is the meal I make each year before trick-or-treating because it's easy to make ahead of time then reheat, plus it fills us all up. Pair with Gluten Free Cornbread squares or muffins before heading out!
