Hi Reader,

These days, my five-person family can easily demolish two pounds of ground beef on taco night. What used to feel like a quick and casual meal now feels like a major investment!

If meat prices are giving you sticker shock too, you'll want to try these gluten-free recipes that feed the entire family with just one pound of meat. My family will eat a vegetarian meal at least once a week, but they do prefer meat-based dishes like the ones I'm sharing below.

​Hamburger Soup: cozy, veggie-packed soup where a little ground beef goes a long way.

​Reuben Chicken: chicken breasts are sliced into cutlets to feed more, AND cook faster. (Try my Pizza Chicken if you prefer that flavor).

​Cheesburger Bombs: even you double the recipe, you still need less than one pound of ground beef!

​Cheesy Chicken Burrito Skillet: rice, beans, and melty cheese stretch a pack of chicken breasts to create a filling, one-pan dinner.

​Beef and Veggie Enchilada Skillet: loaded with veggies, corn tortillas, and homemade enchilada sauce, so one pound of beef can feed an army.
