I mean it's every single night - who could have seen this coming?! (I'm being silly). Seriously though, given the rising cost of groceries, today I'm kicking off a 6 Week Gluten Free on a Budget email series to get a family-friendly dinner on the table each night without breaking the budget. We're starting with the easiest win of all: shop your home. Before buying anything new, raid your fridge, pantry, and freezer for inexpensive kitchen staples like beans, rice, canned tomato products, pasta, and frozen meat and vegetables to build the following inexpensive recipes this week. 🗓 Week 1: Shop Your Shelves Easy Chicken and Rice Soup: rice, broth, dried seasonings, chicken breasts. Easy Pinto Bean Bowls: rice and beans. American Goulash: pasta, canned tomatoes, ground beef or turkey. BBQ Chicken Quesadillas: cooked chicken, shredded cheese, BBQ sauce. Italian Rice Ball Skillet: rice, ground meat, frozen peas, canned tomatoes. 🗓 Week 1 Recipes #1 Easy Chicken and Rice
#2 Easy Pinto Bean Bowls
#3 American Goulash
#4 BBQ Chicken Quesadillas

🍽 More Pantry-Dinner Inspo 🍅 Got canned tomatoes? 🫘 Beans in the cupboard? 🍚 Rice or GF Pasta? Next week I'll share the recipes I make when the total cost of dinner needs to stay extra low. 'Til then! Are we friends on social media? Let's connect: Enjoy! |

Hi Reader, Although my job as a recipe developer is to create gluten free recipes I think YOU'LL love, selfishly, Gluten Free Quiche is one I couldn't wait to dive into. I hadn't had a slice of warm, savory quiche since going gluten free over a decade ago, and it was the first thing I made after mastering Gluten Free Pie Crust last year. Expectations = BLOWN out of the water! My entire family loves this recipe (minus one child with food allergies), and I'd love for you to try it for Easter...
