Hi Reader,

This week a friend and I were commiserating over how hungry we've been lately. We attributed it to our body's biological clocks sensing the arrival of fall and wanting to shore up for the season that shall not be named.

I mean, the waistbands of my pants hate me, but at least I'm eating well! 😆

You will too with this week's FREE gluten free meal plan filled with delicious, seasonal, and cozy recipes. This might be my favorite week yet — I hope you and your family love it too! Here's what's on deck:

PS: My 8 year old smashed two of these in under a minute this week. 😳

Let's Break it Down

#1 Sesame Peanut Sauce Noodles

I think about this mouthwatering recipe each time I reach for the peanut butter in our pantry — which is often with three young children! 😂 I also switch up the noodles depending on what I have on hand. Everything from spaghetti, to angel hair pasta, and brown-rice ramen noodles work great. Add thawed + shelled edamame, cubed extra-firm tofu, or shredded rotisserie chicken to pump up the protein factor, if you'd like.


#2 Cheesy Ham and Hash Brown Casserole

This casserole is a love child between Party Potatoes Deluxe (IYKYK) and Hash Brown Casserole, and is impossible to stop at just one scoop. Serve with steamed broccoli, sautéed zucchini, or Cucumber Tomato Salad. Leftovers reheat fabulously for lunch.


#3 Crock Pot White Chicken Chili

This is an IGE-reader, and personal family favorite. Its not a cream-cheese-thickened chili, rather, it's on the brothy side, hearty yet super healthy, and naturally low in fat (more room for Gluten Free Cornbread). Serve with all your favorite chili fixins.


#4 Skillet Shepherd's Pie

Bowls are always licked clean of this cozy, and satisfying 1-pot meal. For the sake of convenience I often use store-bought prepared mashed potatoes (see post for my favorite brand), though I've included directions for homemade mashed potatoes in the recipe card too. I often serve side salads first while our scoops of Shepherd's Pie are cooling off in our bowls.


#5 Pizza Fries

Gluten free, SO satisfying, and SO much easier than making gluten free pizza crust (coming from someone who has her own Gluten Free Pizza Crust recipe!) Kids adore this meal, and it's also so much less expensive then ordering or buying a GF pizza.
