Hi Reader,

This week, I signed my kids up for a bunch of summer camps, clinics, and clubs, which had me dreaming of sunshine-filled days, afternoons on the water, and watermelon - always watermelon! Meanwhile, half the country is about to be hit with a monster winter storm.

That said, I've packed the latest weekly meal plan with cozy, nourishing, and comforting recipes that will warm you from the inside out. Stay safe out there!

Here's what's on tap:

🍽 Weekly Meal Plan

1️⃣ Crock Pot Mojo Pork

2️⃣ Colorado-Style Green Chili

3️⃣ Gluten Free Tuna Noodle Casserole

4️⃣ Pastina Soup (Italian Penicillin)

5️⃣ Ground Beef Enchiladas

📆 Let's Break it Down

#1 Crock Pot Mojo Pork

You've never met a crock pot recipe as beloved as Mojo Pork (well, this one comes close!) Hundreds of folks have raved about this easy, flavorful, long-cooking crock pot recipe over the years - try it and see why.

#2 Colorado-Style Green Chili

I am begging you to try this recipe, even if pork isn't usually your thing. It's one of my favorite recipes on IGE (and yes, I say that a lot, but it's true!) If you can't do pork, swap in bone-in, skin-on chicken thighs and sear/braise them this way. Make 3-4 days ahead of time then re-warm on the stove. Cornbread on the side is a must!

#3 GF Tuna Noodle Casserole

I started craving TNC earlier this week and so here we are. 😂 You'll love this cozy, creamy, modernized dish as much as we do. No canned soup or extra sides required.

#4 Pastina Soup

Has your family been hit with a bug recently? Hopefully not, but if someone's feeling under the weather, my Pastina Soup, aka Italian Penicillin, is the answer. Nourishing, cozy, and light yet filling. Serve with warm bread or biscuits and plenty of butter.

#5 Ground Beef Enchiladas

Be one of the first to try this brand new recipe I posted to IGE earlier this week. Three words: easy, make-ahead, DELICIOUS. It's a party on a plate!

crock pot sausage and peppers

Hi Reader, Historical fiction is my favorite book genre, and I often find myself wishing I could jump right into the story as I read — living in 19th-century New York City or tagging along on the Oregon Trail (ok, maybe for just a couple of hours!). Then I remember how lucky we are to have modern conveniences like indoor plumbing, washing machines, the internet, and crock pots. 😆 With that in mind, today I'm sharing 10 comforting, gluten free crock pot recipes that make dinnertime mercifully...

plate of beef enchiladas

Hi Reader, Beef Enchiladas are the result of my ongoing quest to find new ways to use my homemade red enchilada sauce (it really is that good!) This is the kind of dinner that smells incredible while it's baking, tastes even better, and has the family asking, "When can we have these again?" Best of all, you can partially or fully assemble everything ahead of time so all you need to do is pop the enchiladas into the oven at dinnertime. I love this meal for us! Pencil this crowd-pleasing,...
