Hi Reader,

In this week's episode of "Gluten Free on a Budget", we're talking recipe cascades — i.e. dishes you can cook once then use in multiple different ways.

Not only does this save you money but, maybe more importantly, TIME — which seems to be in short supply these days!

💡 Tip: For a family of 4-5, the slow cooker meals yield enough meat to eat once then use twice, without having to double the recipe.

🗓 Week 4: Cook Once, Eat Twice

Slow Cooker Pulled Pork:

  • Dinner 1: Tacos or quesadillas.
  • Dinner 2: Nachos or rice bowls.

Easiest Roast Chicken:

Crock Pot Salsa Chicken:

  • Dinner 1: Tacos or quesadillas.
  • Dinner 2: Enchiladas or nachos.

Restaurant-Style Ground Beef (double the recipe):

Easiest Baked Chicken Breasts (double the recipe):

⭐️ Week 4 Challenge

Cook a whole chicken. That's the challenge. 😂 I know it can feel intimidating, but truly it's simple. The cost per pound and number of dishes, including homemade stock, you can make from one chicken is incredible!
