Hi Reader,

Take a spin around the grocery store and you can easily see that gluten-free items like bread, pasta, and convenience foods cost way more than their conventional counterparts.

That said, Week 2 of my Gluten-Free on a Budget series is all about $2/serving dinners (or less!) that lean on naturally gluten-free AND normally inexpensive ingredients.

Transform wallet-friendly and versatile staples like potatoes, rice, and beans into something amazing! Here's what's on tap:

🗓 Week 2: Budget-Friendly Recipes

Baked Chicken Thighs: ~$2/serving. Ridiculously easy and foolproof.

Perfect Baked Potatoes: ~$0.75/serving. Load 'em up with whatever you have in the fridge.

Ham and Bean Soup: ~$1.75/serving. Hearty, satisfying, and make-ahead.

Cheese Enchiladas with Red Sauce: ~$1/serving. Comfort food for pennies.

Chicken Fried Rice: ~$1/serving. Perfect for leftover chicken, or swap in shrimp, kielbasa, or tofu.

⭐️ Week 2 Challenge

Find out when (or if) your grocery store offers a discount on "health market" groceries, which is typically where gluten free-specific groceries are kept. My grocery store offers 10% off health market items every Wednesday!

lemon pepper chicken on a plate

Hi Reader, One of my kids is convinced that spring will arrive tomorrow, March 1st. To be fair, we ping pong between 30s and 60s each week this time of year, but I didn't have the heart to tell them there are still a few more sub-seasons to get through in the Midwest before spring actually arrives. That said, March is a fun month to cook through because we can still enjoy cozy favorites while sneaking in a few lighter, springier meals when the weather allows. This is my favorite recipe to...

stack of cheeseburger bombs

Hi Reader, Gluten Free Cheeseburger Bombs with Special Sauce are my new favorite food. Cheesy, soft, and chewy (a rare texture in the gluten-free world!), they're just as good hot and fresh from the oven as they are reheated. I just polished one off after a quick 25-second spin in the microwave! If you tried and loved my Gluten Free Breakfast Bombs, these are the dinner equivalent, though they're great to have on hand in the fridge for easy lunches and after-school snacks. Anytime is a good...

chicken pad thai in a bowl

Hi Reader, In true Midwest fashion, we kicked off the week with a 70-degree day and ended it with 7" of snow. I've said it once and I'll say it again — stay weird, Iowa! 😆 I'm seeing similar forecasts around the country, so maybe we stay in and cook something that tastes like it came from a restaurant, but is gluten free and easy to make at home? From crowd-favorite Tex-Mex recipes, to my favorite Ecuadorian dish, saucy noodles, and copycat soups, you can save money and stay off the roads...
