Hi Reader, As someone who needs to eat gluten free, I feel like a HOT lunch – vs a salad or something — feels extra special and satisfying. Can you relate? If so, Chicken Caesar Pesto Panini. That's it, that's the email. 😂 Seriously though, this sizzling panini is a masterpiece, plus the recipe makes enough for 2-4 sandwiches, depending on how big your appetite is. That said, I like to heat one fresh in a skillet or my panini maker then wrap the remaining sandwiches in plastic wrap and stash in the fridge for later in the week. Hot, crispy, cheesy, and hearty — you will crave this panini until you cave in and try it!
