Chickpea "Chicken" Salad

Hi Reader,

Brats, dogs, dips, chips. 😵‍💫 Are you in need of a fresh recipe after a fun yet indulgent holiday weekend?

I've got just the thing 👉🏻 Chickpea "Chicken" Salad.

This dish is the culinary equivalent of the jeans in the The Sisterhood of the Traveling Pants. It just WORKS, and is loved by everyone, even if you don't typically like chicken salad or beans.

Quick, plant-based, full of protein and fiber, serve this light summer lunch over greens, in flatbread, or with crackers, carrot chips, or baby bell pepper halves for dunking.

Reader Danielle raves: "This recipe is fantastic! We have been trying out a vegetarian diet and this was perfectly craveable, just like regular chicken salad! … I highly recommend this recipe to anyone, even if you are a carnivore!"
