Hi Reader,

With Labor Day in the rearview mirror, my kids' after-school activities are in full swing and dinnertime can feel like an Olympic relay race some nights.

That said, the recipes I'm sharing in this week's menu are ones that can be kept warm and eaten staggered if needed, or enjoyed hot and fresh. As always, arrange these meals to fit your needs and schedule best.

Let's Break it Down

#1 Restaurant-Style Chicken Fajitas

This recipe's claim to fame is that it doesn't contain chili powder - I feel strongly about this omission in order for the fajitas to truly taste like a restaurant's! Pair with Lazy Girl's Guacamole (avocado + lime juice + garlic salt) for an easy and incredible weeknight meal.


#2 Skillet Tater Tot Casserole

I usually double (or more) the minced mushrooms and nobody knows the difference. My 3 young kids devour this meal - the adults do too. Serve with side salads or Air Fryer Asparagus.


#3 One Pot Gnocchi Chicken Pot Pie

This is another family fave, and a complete meal in one. Serve with Gluten Free Focaccia.


#4 Creamy Sweet Corn Pasta with Basil

Despite the name, there's no cream in this dish. It's the perfect meatless meal to bridge the gap from summer lightness to fall coziness. Shockingly delicious.


#5 Big Mac Salad

It's incredible how much this tastes like a Big Mac - minus the gluten. Add homemade GF croutons for the real deal experience.
