Hi Reader,

My kids are officially back in school, so I thought this would be the perfect time to bring back the highly requested Weekly Menu email!

Each week I'll send an email with 5 gluten free dinner recipes to plan and prep ahead of time to avoid the dreaded 4pm question: what am I going to make for dinner tonight? Feel free to mix and match the recipes to the day they'll work best for you.

Without further ado, here is your FREE Weekly Meal Plan for next week:

Let's Break it Down

Mon: Crock Pot Italian Beef Sandwiches

Slow cook all day then shred and serve on buns, or go bunless for a low-carb option, which is what I usually do. Serve with side salads.


Tues: Pasta Fresca

Use high-protein pasta or add diced chicken or shrimp for a little extra "oomph". That said, this fresh, fast, no-side-dish-needed meal is plenty filling on it's own.


Weds: Mini BBQ Cheddar Meatloaves

Assemble the mini meatloaves then store in the fridge for 2-3 days so all you have to do is pop them into the oven at dinnertime. Serve with roasted asparagus, broccoli or cauliflower, or regular or sweet potato fries.


Thurs: Sweet Corn, Kielbasa and Potato Soup

If there's still fresh sweet corn available in your area - use that. Otherwise frozen works great too.


Fri: Chicken Caesar Salad Pasta

This is another full meal in a bowl. Grill, bake, or saute the chicken up to a few days ahead of time then assemble cold and devour!
