🍎📚 5 Easy Back-to-School Dinners

Hi Reader,

Ready, set, SCHOOL! My little chickadees officially head back to school tomorrow, and I'm returning to a steady meal plan for a delicious, and well-organized week.

We're all (mostly) thrilled.

Would you like to join me? Here's what's on tap:

1️⃣ Shortcut Vegetable Ragu. Tastes like spaghetti and meat sauce, yet is packed with vegetables. My kids inhale this.

2️⃣ Crock Pot White Chicken Chili. I like to add everything to the removable crock the night before so all I have to do is place it onto the base and press "on" the next day. This is another recipe that all five of us adore.

3️⃣ Creamy Pinto Bean Bowls. My husband recently said I should make these every week. 👏🏻 We pair the beans with cooked rice, roasted or sautéed peppers and onions, and sautéed diced chicken seasoned with taco seasoning.

4️⃣ Baked Burgers. Make the patties ahead of time then toss them into the oven at dinnertime. SO EASY.

5️⃣ Pizza Fries. We made it to Friday! Pizza Fries are a fun and whimsical way to celebrate. 🎉

wok of chicken and broccoli stir fry

Hi Reader, Recently I received an email from a reader asking if I had a category of recipes that were both gluten and dairy-free. I've received a version of this question quite a few times over the years and know that many folks who need to eat gluten free, also need to cut dairy. One of my children is severely allergic to dairy, so this is a topic I'm very familiar with....
